Very Olde St. Nick Ancient Cask “Immaculata”
Tasting Notes / Description
Very Olde St. Nick “Ancient Cask Immaculata” is a Kentucky straight bourbon whiskey, bottled at cask strength and non-chill filtered to preserve its full character. This limited release includes whiskey aged up to 15 years and is produced by Preservation Distillery in Bardstown, Kentucky. The nose opens with raspberry jam, tart cranberry, and dark cherry, followed by walnut, baking spice, and seasoned oak. On the palate, it delivers layers of brown sugar, cherry wood, cocoa, and fig, with notes of tobacco and toasted spice. The finish is medium to long, with oak tannins and lingering dark fruit. This expression highlights the maturity and depth of older barrels while maintaining a vibrant, fruit-driven core.
